It’s National Kale Day!

Apparently, it’s National Kale Day.

Kale isn’t for everyone. I find that you’re either like it or you don’t. There’s isn’t much of an in between. I happen to love it, and these are my 4 favorite ways to enjoy it.

A BKA Sandwich

A what? A BKA is my seasonal twist on a traditional BLT — Bacon, Kale, and Apple. I use Applegate Farms turkey bacon, leaves of fresh organic kale, and thin slices of a fuji or honeycrisp apple. I lay it all on sourdough bread with a bit of mayo.

My Favorite Seasonal Salad

This salad is simple and combines many elements of the fall season: chopped kale and apples, sunflower and/or pumpkin seeds, and small chunks of grass-fed cheddar cheese. Drizzle with your favorite dressing. I love this tahini base dressing.

Juice

Throw in some lemon and apple with the kale, and you’ve got a wonderfully refreshing beverage.

Kale Chips

This is a tasty, sweet and salty snack. I can’t eat nuts, so finding packaged kale chips sans nuts can be tricky. It’s also more expensive than making your own.
